Smoked pork bones 1 LB
Reddishes 2 bunches, sliced
Parsley root, chopped
Heavy cream 3/4 c
2 egg yolks
Parsley greens 1/2 c, chopped
Salt, pepper by taste.
In a soup pan, boil the port bones for
30 min., remove from the broth and reserve.
Beat the cream with yolks, gradually
add to the boiling broth stirring constantly. Add the reddishes and
parsley root, simmer until soft. Servewith fresh parsley.
